I stared at the leftovers in the fridge… waiting for inspiration to strike.
“There’s got to be something new I can make with them…” I thought.
I hate wasting food, and my kids hate eating leftovers, unless, you know it’s cake. If it’s cake there’s not issue. Unfortunately, that night I didn’t have any cake.
Then inspiration struck. I took all the leftovers out of the fridge and lined them up on the counter.
“Guys come here!” I yell
“Tonight we are going to play a game for dinner.”
The oldest raises his eyebrows at me.
“Tonight you are in charge of making your own dinner.” I wave my hands expressively in the air to make it more exciting.
“You can make whatever you want. ”
“Whatever we want?” asks Anna
“Yep, there’s only one rule. You have to use at least two items from the stuff lined up on the counter.”
Luckily that rule didn’t quell their enthusiasm too much.
Please ignore any and all fashion choices. We will try to look less like orphans once we break out the new school clothes.
Anna and Josh quickly went to work. Josh making an egg mcmuffin concoction with some leftover pork thrown in. Anna ended up with brussel sprouts and quesadillas, and Max chose, cole slaw, blue berries, and sweet potatoes (he was the only one who later regretted his choice). I will spare you pictures.
They were even smiling when we were done.
